Cleo's Cowboy Caviar

I have seen this recipe so many times and had wanted to try it out and bring it to work for lunches. This is my variation of Cowboy Caviar. It's basically a bean salad with veggies.
Ingredients:
| for the Dressing (rough measurements, to taste)

Directions:
In one large bowl mix all chopped produce: onion, jalapeno, bell pepper, baby cucumbers and frozen corn (it will defrost quickly, I also made this salad a day before eating so the frozen corn was my preferred choice).
Drain all beans and place into a colander for rinsing. Once rinsed mix beans into chopped veggie bowl.
In a measuring cup or if you prefer a small bowl mix together your dressing ingredients.
Pour dressing over mixture and mix the salad well, adjusting dressing measurements if needed and to preference.
Depending on when you are eating this, I like to add the chopped avocado right before serving as I wanted to keep the salad as fresh as possible over the next few days.
Best served chilled in a bowl or plate and eat with tortilla chips!
I forgot to get a pic of it with the avocado mixed in as I took it to work the next day to eat lol
This Cowboy Caviar was pretty good, it definitely grew on me. At first I wasn't sure if I would ever make it again but about two weeks later, I was craving it.
